Last week, a friend of mine and I had a date for lunch. We planned on making peanut butter and jelly sandwiches and going for a walk down to the beach. We did the picnic thing in order to be budget-conscience and all, but it turned out to be the best lunch ever. See, not only did we share a wonderful conversation and some exercise, we had the best PB&J I have ever had. How's that, you ask? My dear friend had a jar of apricot-plum jam that was made by our mutual friend, Heather, who passed away in August. While we both hesitated to open it at first, we then agreed that it was something Heather would love for us to do together. I'm so glad we did. It's a lunch I won't forget because I know she was right there with us.
